Raspberry Sponge Roll

  • 120ml of Flour
  • 100ml of sugars(divided in half)
  • 5 Eggs (whites and yols seperated)
  • 1 teaspoon of vanilla essence
  • 2 tablespoons of icing sugar  
  • 100g Raspber jam(optional-depend on your favor)
  1. (A)Whip the egg whites till double in size,then adding the sugars tablespoon by tablespoon. Continue whipping until it turn up to be fluffy.Set it aside.
  2. (B)In another bowl, mix the egg yolks,sugars(another half),vanila essence. Whip the mixture for few minutes. Then, add in flour and whisk it together.
  3. After that, pour the (B) to (A) and gently mix the combination.
  4. Then, pour the mixture on a baking tray with waxed paper on it. Spread it evenly.
  5. Bake it in 180 degrees celcius for 15 minutes.
  6. While it's baking, use a clean towel(size of sponge cake) and dust the icing sugars on it.
  7. After 15 minutes, take out the sponge from oven, then peel off the waxed paper carefully.
  8. Roll the towel(it's to ensure the ) with the sponge,and leave it for about 30 minutes.
  9. After 30 min, open the towel and there will be natural curl. Then, spread the jam evenly over the sponge!
  10. Lastly, roll it back without towel. Done!

After 15 min baking,and took out from oven.
Rolled it with CLEAN towel for around 30 minutes until it's cool down.
After spreaded the filling,and rolled.
Done!my first try!the roll is kinda thick.(due to small square tray!should use rectangle tray.)
The secret receipes i got from one of the blogger-Kimberlycun. She cooked nice foods. Highly recommended. I will try for 2nd time other days with different flavor.(ps:i will make it slimmer than this for next round.)
